Tried & True Quiche Recipe

2 frozen deep dish pie shells
6+ slices of Swiss Cheese
7 eggs, beaten
2 cups Half & Half
4 tsp. flour
1 tsp. salt
1/2 c. shredded cheddar cheese
and then the fillings.. which is why I put "recipe" in quotes... b/c I change things up a lot... basically just fill the pie crusts LOOSELY up to just below the rim. Make sure all of the fillings are cooked -- frozen vegetables included. Ideas of fillings: Bacon & Sausage, Ham & Spinach, Ham & Leek, Chicken & Broccoli, etc.

Preheat oven to 350. Let pie crusts defrost for 5-10 minutes and then poke a bunch of holes all over the bottom with a fork. Cover the bottom of the shells with swiss cheese, places pie crusts on a cookie sheet and bake for 5-7 minutes, until cheese has begun to soften/melt. Remove from oven and add your fillings.

Mix together eggs, Half & Half, salt and flour, then pour over the above ingredients. Sprinkle 1/4 c. cheddar cheese on top of each pie. Bake for 50-55 minutes at 350, until toothpick or knife inserted in center comes out clean. Let cook for 5 minutes and serve!
