Crusty Mac & Cheese

Crusty Mac & Cheese Recipe


1 lb. elbow pasta, boiled until just tender, drained & rinsed under cold water

4 tbsp. butter
12-16 oz. grated extra-sharp cheddar
12-16 oz. grated American cheese
1 tsp. hot sauce (optional)
1/2 - 1 tsp. Cayenne Pepper
Salt & Pepper to taste
2/3 cup Half & Half

-Preheat oven to 375 degrees.
-Grease 9x13 inch baking dish with 1 tbsp. butter
-Combine the grated cheeses, setting aside 2 cups.
-In large bowl, toss pasta, grated cheeses, cayenne pepper, hot sauce (if used), salt and pepper.
-Place in pan. Pour Half & Half over surface, sprinkle reserved 2 cups cheese on top, and dot with remaining butter.
-Bake 45 minutes, then raise to 400 for 15-20 minutes until the top is crusty (parts of top will get blackened).

EDIT from Gina: I have found that instead of putting the oven at 400 at the end, just turning the broiler on high for a few minutes does the same thing in much less time and seems to make it crustier.
